Baked sweet potatoes with goat’s cheese and lemon

Sweet potatoes are so obliging!

They can be used in everything from salads to mash and casseroles, and even make a wonderful filling in the thick, sweet American pancakes.

Here the sweet potatoes are accompanied by goat’s cheese, which gives the dish a wonderful umami taste.

This recipe has been developed by Ditte, who blogs as The Food Club.


Peel the potatoes and cut them into cubes or thin slices and turn them in the oil, lemon zest, salt and pepper.

Transfer the mixture to a baking tray lined with baking paper and bake at 200 degrees Celsius (fan-assisted ovens) for about 20 minutes.

Take out the baking tray and crumble goat’s cheese over the potatoes and sprinkle with pumpkin seeds.

Bake for a further 10 minutes.

Arrange the potatoes on a dish and season with salt and pepper.

Top with rocket and serve the salad warm, perhaps with pork.
