Ingredients:

Bruschetta with grilling cheese and herb oil

This is a simple recipe for a quick starter.

These small bruschettas are perfect as vegetarian snacks or as an accompaniment to an inviting summer buffet.

They are crunchy, crispy, simple and very savoury with a hint of garlic and lemon.

Method:

Rub the slices of bread with a clove of garlic cut in half and drizzle with a little olive oil.

Grill the slices or toast in the oven until crisp.

Slice the barbecue cheese and grill or fry until golden.

Cut the tomato in half, remove the seeds and chop finely.

Mix the tomato with 1-2 tbsp of olive oil, the herbs and the lemon zest.

Place the slices of grilled cheese on the bread and top with the tomato mixture, salt and pepper.
