Grilled cheese with walnuts, ginger and raspberries

Sometimes you feel like something that is both salty and sweet, in which case this delightful summertime recipe is just the thing!

Serve it as a dessert or a snack.

This recipe has been developed by Samantha Fotheringham, who blogs under the same name.


Peel the skin off the ginger and grate it finely.

Mix the grated ginger with water, lemon juice and honey.

Pour the ginger mixture into a pan and allow to boil while stirring for 1-2 minutes, until it forms a thick yet pourable, syrup-like consistency.

Rinse the raspberries and coarsely chop the walnuts.

Slice the grill cheese into 8 slices.

Place the grilling cheese on a grill and grill the slices for 1-2 minutes on either side until they are golden brown.

Place the cooked grilling cheese onto 4 plates.

Divide out the raspberries, walnuts and ginger mixture.

Finally, garnish with mint leaves.
