Raspberry-poached pears with honey-grilled white cheese and basil
Raspberry poached pears with honey au gratin salad cheese is a really delicious and delicate dessert recipe. This dessert will be the most beautiful dish on your summer dining table and a fantastic conclusion to dinner. The au gratin salad cheese provides the dessert with the perfect salty balance.
Peel the pears, leaving the stalk in place, and remove the core from the base. Bring the raspberries, sugar, water and vanilla to the boil and combine. Simmer the pears in the mixture
until tender, approx. 15 minutes. Put in the fridge to infuse for at least 30 minutes.
Strain the liquid and reduce to sauce consistency. Heat the pears in the sauce.
Crumble the cheese into smallish pieces and heat the honey together with the fennel seed.
Pour the warm honey over the cheese and brown under the grill for approx. 2 minutes. Take care not to let it get too dark.
Serve the warm pears with the mixed berries, cheese, basil leaves and flaked chocolate.
