- 200 g Taverna Domyati or Taverna Domyati in cup
- 500 g spelt grains (or pearl barley)
- 1 cucumber
- 1 red pepper
- 1 small onion
- Approx. 150 ml fresh, chopped herbs (e.g. basil, chives and chervil)
- 1 handful of rocket
- 100 ml olive oil
- Juice of 1 lemon
- 2 tsp salt
- Freshly ground pepper
- Approx. 600 g salmon fillet without skin
Spelt salad with Domyati and fried salmon
If you’re looking for a dinner that is easy to prepare, then spelt salad with roasted salmon is a delicately balanced and satisfying dish that is both refreshing and delicious all year round. The preparation time for this dish is just 30 minutes – it’s a quick and easy dinner.
Boil the spelt grains according to the instructions. Dice the cucumber, red pepper and onion and mix with the boiled spelt. Crumble the Domyati cheese and add together with herbs and rocket.
Whisk oil, lemon juice, salt and pepper together and pour over the tossed spelt salad. Season the salmon with salt and pepper and fry in a pan with butter or oil.
Serve the salad with fried salmon.
